Smohundro's Rum Baked Bananas
serves 4
4 bananas
grated rind and juice of 1 orange
2 tbsp dark rum
1/4 cup brown sugar
pinch ground ginger
fresh grated nutmeg
3 tbsp butter
You need ramekins to bake these in, although you could probably make one big one
in a small casserole dish and then spoon it out.
Preheat oven to 350 F.
1) Peel and slice bananas. Put one banana's worth in each ramekin.
2) Spoon orange juice and rum over sliced bananas. Sprinkle sugar, orange rind,
and spices. Dot with butter.
3) Cover ramekins with small pieces of foil or buttered wax paper and bake for
15 minutes.
4) Cool and serve with yogurt/cream/vanilla ice cream. (We usually do ice
cream.)
